I decided to try this recipe on Trevor's Brother Andrew and his wife Stephanie. So we(Steph and I) were marinading the beef when we saw the recipe on the blog Mennonite Girls Can Cook, it was a maple glazed salmon, we thought we would marinate beef in that sauce add that to the menu for the meal. Long story short...it was yummy! So here is the recipes we used for that meal.
Ranchero Sauce:
2 tbsp cooking oil
1/4c chopped onion
2 cloves garlic, chopped
1 jalepeno pepper seeded and diced
3c diced tomatoes(use the ripest and reddest you can find)
1 tbsp oregano
1/2 tsp chile powder
1 tsp lime juice
pinch brown sugar
salt and pepper to taste
-saute oil, garlic, pepper, onion for 2-3 minutes
-reduce heat and add tomatoes cook for 6 minutes
-add seasonings and simmer 5 minutes
- cool then put through blender
Carne Asada(beef strips)
2 lbs flank or round steak sliced in narrow strips
1/2 c lime juice
6 garlic cloves
1 tsp black pepper
1 tbsp olive oil
-marinate together in fridge for 2 hours( I did for 4 hours)
-sprinkle with salt
-coat in flour
-deep fry
Now I said something about a maple glaze. Here is the recipe I used to marinate beef :
1 cup maple syrup
3/4 cup soy sauce
Combine and marinate in ziplock bag for 2 hours in fridge( again I did 4 hours)
-coat in flour
-deep fry
We put the meat on flour tortillas and put the ranchero sauce on top before rolling them up.
Next time I am going to add some cumin to the ranchero sauce. This could also make a great app just on it's own.
