I have had a couple people ask me for ice cream recipes, so here are my 3 favourite.
French Silk Chocolate ice cream
2 c whole milk
2c whipping cream
1/3 c cocoa
2 ego yolks
2/3 c white sugar
1 tbsp vanilla
Put milk, cream, cocoa in a large pan and heat to just about boiling. Meanwhile whip egg yolks with a fork, then add sugar and vanilla. When milk/cream has heated up add about 4 tbsp of that mixture to the egg mixture( called tempering). Then add the tempered egg mixture into the pan and heat for a few more minutes, to almost boiling. Put in a bowl and cool on fridge completely, I do overnight. Put saran wrap on top of the mixture so a skin doesn't develop on top. Put in ice cream maker and let it churn for 30 min.
Mint chip
2 cup whole milk
2 cup whipping cream
1 cup fresh mint leaves
4 egg yolks
tsp vanilla
2/3 c white sugar
4 oz(125g) chocolate
2 tsp oil
Much the same as above instructions. Heat up milk, cream, mint in pan, till barely boiling. Whip eggs,sugar,vanilla. Temper the mixture then add to pan and heat till almost full boiling. Leave mint leaves in mixture until you about to cool it. Put it in ice cream maker and let it churn for 30 minutes. In the last 5 minute melt chocolate and mix in oil, then pour into almost done churning ice cream.
Vanilla
2c whole milk
2c whipping cream
1 whole vanilla bean-split open lengthwise
2 egg yolks
1/2c sugar
2 tbsp vanilla
heat up milk and cream and vanilla bean. Mix egg, sugar, vanilla. Temper with milk mixture, then add rest of egg mixture to milk mixture and cook for about 4 minutes, always close to full boil. Cool and then churn for 30 minutes. Here you can add almost anything extra you can think of, Do it about 5 minutes before the end of churning. Like cookies, candy bar bits, chocolate, the sky is the limit!
